I think all my favourite cookies or biscuits as we in the UK call them, are chocolate digestive, those ones with the peanuts all over the top, Custard Creams, iced rings, which aren't actually chocolate, but i love them anyway, along with lemon puffs and pink wafers. I love those huge, huge chocolate chip cookies about the size of a big side plate which we can buy freshly baked in a cafae or something, or they come separately in their own selophane wrappers. I also like shortbread fingers and rectangles with the curls round the edge, and jammy dodgers. That's sort of like a ring with a biscuit stuck to the under side, with a blob of jam in the centre.

Tim Tams! Aussies out there should be familiar with the Tim Tam. It's like a sandwich cookie with chocolate on the outside, and chocolate cream on the inside. There's 8 different flavor, but I've only had the original. So good!

I love Korambiethes (Greek butter cookies) that I make at home. Here's an excellent recipe for them. It gives the option of vanilla instead of alcoholic stuff like brandy. The personal note is mine while the note at the end came with the recipe.

"Greek Butter Cookies (Kourambiethes)
(Personal note: I found out that it's much easier and the dough becomes much more usable if, instead of beating it, I squeeze it and move it around with my hands. It's more thorough and blind-friendly that way too.)
6 oz Unsalted butter, softened
3/4 cup Sugar
1 lrg Egg
1 tbl Vanilla -- (or cognac)
1 3/4 cup Flour
1 tsp Baking powder
1/4 tsp Ground cloves
Confectioners sugar
Method :
Beat butter and sugar till fluffy, then beat in egg and vanilla
Add remaining measured ingredients and chill for 1 hr. Roll into balls or crescents(@ 1in.) Bake at 350 for 10 mins. Cool and dust generously with conf. sugar. Yassoo
(Gia sou means hello-good-bye or good health. Very common Greek greeting.)"

I absolutely love thin mints. There's nothing like mint and chocolate to me. For homemade cookies my favorites are soft oatmeal rasin and soft chocolate chip. There's nothing like a warm chocolate chip cookie right out of the oven. Oo now I want to go bake some. lol

Gotta say love the gingerbread frosted Christmas cookies. I don't mean the really thin crisp pseudo kind either. Usually cut in the shapes of Christmas ornaments.
Used to be they hung those on the tree: not the frosted ones of course. Wouldn't go eating one of those after the holidays, though you might be able to use it as a weapon. They harden up pretty good there hanging on the tree.
But the really good ones are frosted / usually somewhat thick, and you can taste the ginger / spices in them. Good stuff that.
